No avocado wasted

I just could not have forgiven myself if I let one of natures’ best creations, the avocado, go to waste on my counter. But, I wasn’t in the mood for guacamole, or anything savoury for that matter. I had to think fast.
Luckily avocados are just as happy being whipped up with salsa as they are with chocolate. I was reminded of a recent dessert experience at a local vegan restaurant that featured a deep chocolate avocado mousse. I was inspired.
I found Renee Loux Unerkoffler’s Perfect Chocolate Mousse recipe and got to work.
I have seen this recipe and many variations on the base reprinted in VegNews and many spots online. Woody Harrleson has been quoted as saying that this dish began his foray into the raw food lifestyle.

My Version of Raw Chocolate Avocado Mousse Ice Cream
In your food processor combine:
1/4 cup softened, pitted dates
2 tbsp agave nectar
2 tsp coconut butter
1 tbsp vanilla extract
Whip until smooth.

Add in:
1 pitted and peeled avocado
Whip until smooth.

Add in:
1/2 cup of raw cacao powder
1 tsp cinnamon
Whip until smooth. Taste for balance of bitter chocolate and sweet dates. Adjust accordingly.

I then put the mousse in the freezer. This way I can turn to it when I need a decadent, frozen treat after a long training run. It is a very rich treat and an excellent way to extend the life of any avocados you may have hanging around your kitchen.
