Dehydrating

Having a dehydrator is kind of like having a slow-cooker. Except, instead of making everything a little mushy, the dehydrator makes everything a little crispy. But I love the way it works on my behalf while I’m out in the world taking care of business.

I love coming home to an apartment that smells like cinnamon, so I tend to fill the trays of my dehydrator with crisps or crackers that will add a little spiciness to my life.

Sweet Flax Crackers
These are my favourite flax crackers. I just soak some golden flax seeds (1 cup unsoaked) and some dates (1/4 cup) for an hour or two. Then I pulse them in my food processor with lots of cinnamon (2 tbsp) and a little nutmeg (1 tsp). I spread the mixture onto three trays and let them hang out for 12-16 hours (flipping them once half way through). They are quite addictive.
Pumpkin Spice Bread
The other day I had some leftover pumpkin puree, so I decided to make a pumpkin flatbread. I added the typical spices: cinnamon, nutmeg and ginger. The bread dough is ground flax seeds mixed with the pumkin puree, raisins and soaked sunflower seeds. After about 12 hours in the dehydrator I had a great compliment to a warm cup of ginger tea.
