Vegan MoFo Day 13: Pumpkin Pudding for your 21-Day Kickstart

I knew this day would come.

I was out late at an amazing Moroccan dinner party (with ample servings of wine) and now I’m scrambling to post something that you might adore.

Luckily, I planned ahead and took a picture of this delicious pumpkin pudding. It is creamy, sweet and incredibly filling.

Following along with this week’s theme of reliable resources on veganism and plant-based nutrition I wanted to share one fabulous app: PCRM’s 21-day Kickstart. I’ve downloaded it in the past.
Yes, I know I’m already following a vegan diet but…I love free recipes. My guess is, since you’re reading vegan food blogs, so do you.

Plus, when I’m in India this November, PCRM will be there too. They are launching their Kickstart program in India and China before the end of 2011!

Back to the free recipes, take this pudding for instance. I found myself on the PCRM website, searching for healthful recipes to share with all of you when I came across a sweet potato breakfast pudding. I’m a fan of sweet potatoes but everyone knows that this is pumpkin season in the blogosphere (and I had an open can in my fridge), so I made the swap.

Breakfast Pumpkin Pudding

1/3 cup rolled oats
1/2 cup soy milk
1 cup cooked pumpkin puree
1 TBSP maple syrup
1/4 tsp cinnamon


1. Blend until smooth.
