Many people have been struck by the awe-inspiring landscape of New Zealand without even realizing it. The breathtaking views captured by cinematographers in films like Lord of the Rings and The Chronicles of Narnia seem other worldly. Although the geography is quite different, the culture is in some ways very akin to Canada. The people I have met from New Zealand always make me feel like a part of their extended family. In their presence I eat more than I need to and I laugh until my stomach hurts.
I’m pretty excited to find myself “tramping” in New Zealand (it means something completely different over there). So, I’ve been studying up on how to speak basic kiwi(mostly because it makes me giggle) and searching out the vegan fare I plan to enjoy to fuel all that hiking.
Searching out location-specific recipes on my favourite blogs has lead to some pretty delicious discoveries. The Maranui Surf Club Salad from 101 cookbooks is phenomenal. The spicy curry tossed with coconut milk, chickpeas and acorn squash is perfect for Canada’s cold fall temperatures and apparently, sitting surf-side in a Kiwi cafe. If you’re trying to make the most of pumpkin season – use that in place of the acorn squash and if you hate cilantro, toss in some parsley instead. I think a perfect Saturday afternoon involves a big plate of this salad and a few episodes of Flight of the Conchords.
Two more sleeps until the end of MoFo and the beginning of my adventure. Whoa.
