Raw Chocolate Orange Truffles

Given your response to Sunday’s post you’ve confirmed for me that this community is made up of the most incredibly inspiring individuals. I was delighted to hear that my words spoke to many of you – it sounds like there are lots of exciting plans in the works.

To continue to fuel those beautiful dreams I have a delightful, sweet and decadent treat to share with all of you.

Do you remember this image? Nicole and I posted it back in April when we launched the Vegan Treat of the Month Club. Once the packages were doled out I received a few requests for my special raw truffle recipe. I created this variation for the dessert class I taught for Meghan Telpner last weekend – it received raves from everyone in attendance so I decided it was time to get it up online.

Although the chocolate-orange flavour may remind you of the Terry’s treats traditionally gifted around Christmas time, this raw, vegan version is full of nourishing ingredients that make these gems a perfect present to share with your loved ones anytime time of year.

Raw Chocolate Orange Truffles

Ingredients

  • ¾ cup cashew butter (from 1 ½ cup cashews)
  • ½ cup maple syrup, at room temperature
  • 1 tsp orange extract
  • 1/3 cup cacao powder
  • 1/3 cup cacao butter, melted
  • pinch of sea salt
  • ¼ cup orange juice
  • Topping:
  • ¼ cup unsweetened shredded coconut
  • 2 TBSP goji berries

Instructions

  1. In a blender or food processor combine all of the ingredients and blend until smooth. Pour into a square pan or medium bowl and chill in the fridge for about an hour to firm.
  2. Pulse the topping ingredients in a food processor until well combined (the colour should be a fun shade of orange). Pour into a bowl.
  3. Once the filling is firm. Roll it into balls using about 1 TBSP as an estimate per serving. Roll each ball in the coconut goji berry coating.
  4. Store in the freezer until ready to serve.

    Uh-oh, spaghetti-o, I spy the devil fruit!

    Luckily for me, I know we’ll be able to make a version of this without the o-word involved, whilst dancing in the kitchen. I was just singing Feelin’ Groovy, and am now onto No Rain by Blind Melon. xo

    Thanks for sharing, Lisa! I am hoping to do correlation between the treats of the month and recipes to see what I like the most before I venture there myself… so having the recipes really helps. Yum!

    These are beautiful!  Love the colour pop from the goji berries.  I am obsessed with cacao butter at the moment, it’s so fun + easy to make healthful, delicious treats with it.
