Broccoli, Chickpea, Quinoa Salad

I’ll be serving up awesome dishes from the menu of my imaginary vegan B&B all month long.

Wasn’t yesterday’s socca pizza delicious? I think I dreamed about it last night.

The kale – sweet potato combo is hard to beat, but today, I’ve attempted to at least match the level of deliciousness with a classic: chickpeas, broccoli and quinoa. If I only told you those three ingredients you may not be as excited about this dish as you should. I promise, the lemon – herb de Provence addition steals the show. Which is quite a feat because I am hopelessly devoted to chickpeas and greens.

I made you a little jar of goodness for your lunch today. Everything is stacked up in delicious layers. I put the quinoa on top so that the flavours will infiltrate the beans and broccoli throughout the morning, making sure every bite is full of lovely lemon-ness by the time you sit down to eat.

If you happen to find a good place to stop and people watch, you could pour out the salad and mix it all together. If not, just scoop through the layers with your spoon and you’ll have the perfect mixture of ingredients in each bite.

Broccoli, Chickpea, Quinoa Salad


  • 1/3 cup quinoa
  • 1 3/4 cup water
  • 1 TBSP lemon zest
  • 2 TBSP lemon juice
  • 1/2 tsp salt
  • 1 tsp herbs de Provence
  • 1 cup broccoli florets, lightly steamed
  • 1 cup cooked chickpeas


  1. Thoroughly rinse and drain the quinoa.
  2. In a small saucepan heat the water to a gentle bowl. Add the quinoa and simmer over medium-low heat for 20-25 minutes. The liquid should be absorbed and the quinos should be fluffy.
  3. In a bowl combine the cooked quinoa, lemon zest, lemon juice, salt and herbs de Provence.
  4. To pack up for later, layer the broccoli, then chickpeas, then quinoa into a jar. To enjoy immediately, toss everything together in a big bowl.
  5. Makes two large lunch servings.

    I love lemon & broccoli together, and of course, chickpeas are welcome to any dinner! This sounds like a lovely & filling lunch!
