Wasn’t yesterday’s socca pizza delicious? I think I dreamed about it last night.
The kale – sweet potato combo is hard to beat, but today, I’ve attempted to at least match the level of deliciousness with a classic: chickpeas, broccoli and quinoa. If I only told you those three ingredients you may not be as excited about this dish as you should. I promise, the lemon – herb de Provence addition steals the show. Which is quite a feat because I am hopelessly devoted to chickpeas and greens.
I made you a little jar of goodness for your lunch today. Everything is stacked up in delicious layers. I put the quinoa on top so that the flavours will infiltrate the beans and broccoli throughout the morning, making sure every bite is full of lovely lemon-ness by the time you sit down to eat.
If you happen to find a good place to stop and people watch, you could pour out the salad and mix it all together. If not, just scoop through the layers with your spoon and you’ll have the perfect mixture of ingredients in each bite.
