Chocolate Chia Parfait

Welcome to Wednesday!

I hope the week is treating you well so far. Last night as I was falling asleep I was trying to decide the best way to welcome the middle of the week. Although not as maligned as Monday, Wednesday certainly doesn’t receive the affection showered upon Friday.

But come on…it is the centre – the core – of the work week. It has the longest name and can often feel like the longest duration. So…let’s make sure to start it off on the right foot. Are you with me?

Just in case you still need some convincing to join Team Wednesday…I made chocolate.


Because you’re my special guest, I thought that a perfect parfait would be the best way to start your day. I picked up some of the last few local raspberries at a farmers market on Monday and saved them just for you. 🙂

Chocolate Chia


  • 1 cup almond milk
  • 2 TBSP chia seeds
  • 1/2 tsp vanilla extract
  • 2 tsp coconut sugar
  • 1 TBSP cocoa powder
  • Optional: berries, shredded coconut


  1. In a jar or container combine all the ingredients (except the optional additions).
  2. Mix well.
  3. Allow to sit for 1-10 hours in the fridge.
  4. If using, garnish with optional ingredients before serving.

    Ooh yum! I’ve made chia puddding but never with chocolate before! I’m totally making this for the dinner party we’re attending tonight.

    chia pudding is one of my big favorites, but i have yet to make a chocolate one. thanks for the recipe, lisa!
