Peanut Butter Chocolate Chip Granola Bars

I’ll be serving up awesome dishes from the menu of my imaginary vegan B&B all month long.

Well it looks like we all survived the first week of Vegan MoFo 2012!

This week I am continuing with my fantasy B&B theme, but we’re moving on from breakfast recipes to some tasty snacks. When you stay at Chez Lisa (my fantasy B&B really deserves a better name) we always send you out into the world with a delicious package to fuel your urban adventures.

Today I tied up a tiny package of peanut butter chocolate chip granola bars just for you. I know most people enjoy the combination of peanut butter and chocolate. In your honour I made this batch a little more spectacular with the addition of candied ginger. Don’t worry…you deserve it.

Whatever you have planned for today, approach it with enthusiasm. I’ll make sure there is a warm place waiting for you by the fire when you return.

Granola Bars


  • 2 cups almonds
  • 7 Medjool dates, pitted
  • 1 cup rolled oats
  • 2 TBSP ground chia, mixed with 1/2 cup water
  • 1/4 cup peanut butter
  • 1/4 tsp salt
  • 1/2 cup non-dairy chocolate chips
  • 1/2 cup raw pumpkin seeds
  • 1 TBSP crystallized ginger


  1. Line a 8x8 pan with parchment paper.
  2. In a food processor pulse the almonds until they are coarsely ground.
  3. Add the dates and pulse until well combined.
  4. Add the oats, chia, peanut butter and salt. Pulse until well combined.
  5. Add the remaining ingredients and pulse until just combined.
  6. Press evenly in the prepared pan. Chill in the freezer to firm up and then slice into 12 bars.
  7. Store in the fridge or freezer in an air-tight container.

    Oh, yay! Oh, yay! I’m so glad you’re in Lucerne!!! Isn’t it gorgeous and so charming? I hope you’re going to post pictures and that you’re having a lovely time there. (Did you buy chestnuts from someone roasting them on the street? I hope so!!) It’s one of my favorite places in the world!

    The granola bars sound lovely, and I love the cute little piece of yarn that’s laying to the side, as if the package has just been opened. Sweet!

    Those look so good! It’s very rare to find a bar recipe that doesn’t include a bunch of sugar/syrups. And peanut butter and chocolate? Double win! Where would I find the crystallized ginger? I’ve never heard of that before.

    I don’t like peanut butter but i’m sure it would work with cashew butter.

    Hi Lisa, I made these today and they are so yummy. What a great recipe, using all my favorite ingredients! I’ve been printing out all your recipes and this is the first one I’ve made . . . so many great-looking foods, so little time! I’m going to get to them all eventually.
