Blueberry Blackberry Lavender Ice Cream

Marvellous mistakes…

Every life is sprinkled or splattered with moments you would change if you could. Those spectacularly awful seconds that you would redo if only life came with a rewind button. I will admit I’ve had a few. Although with hindsight I may think that a different choice/path would have been more ideal, I embrace the fact that life moves in just one direction (forward) and I like to let go and move on. Besides…some of those “mistakes” have turned out to be absolutely marvellous opportunities to grow, learn, and change.

What does this have to do with ice cream?

Well, I realized when I took my first bite of this creamy concoction that the coconut milk I used had been flavoured with peppermint extract (for that frappuccino I posted the other day). I would never have planned to add peppermint to a berry and lavender dessert, but…everyone who tasted it commented on the mint, the layers of flavours and the incredibly combination. As I’ve heard many friends say after other mistakes “I guess this was simply meant to be”. 🙂

Blueberry Blackberry Lavender Ice Cream


  • 1 cup frozen blueberries
  • 1 cup frozen blackberries
  • 2 1/2 cup full fat coconut milk
  • 1/2 cup agave nectar
  • 2 TBSP coconut oil
  • 2 TBSP dried culinary lavender
  • (optional) 1/2 tsp peppermint extract


  1. Blend all of the ingredients until smooth.
  2. Pour into an ice cream maker and allow to churn until thick and creamy (approximately 25 minutes).
  3. Serve or freeze for later. Allow to defrost for 15-20 minutes when removing from the freezer for the ideal texture. 🙂

    wow, what an amazing combo of flavors! So much summertime packed in! I haven’t made homemade ice cream in a while… I gotta make some space in my freezer for the cold part. I have a freezer problem! 🙂

      If only we were neighbours. I would bring you a bowl and save space in my freezer for your ice cream maker insert.

    We have an ice cream maker but I still haven’t made a single batch of ice cream this summer! Terrible terrible me! I have a lot of berries from last years pickings in the freezer so I think this is meant to be. I wonder if I using fresh mint the flavour would come through much..?

      I think fresh mint would work – and yes, you must make use of that ice cream maker. The rewards are so sweet for such little effort.
