Here we are, week three of the Frappuccino festivities!
We’ve been sipping on Java Chip and Caramel Brulée blends, but today I have something even more refreshing, some icy peppermint mocha magic.
The recipe is simple, just a chocolately frapp with a splash of peppermint extract. I even added a few drips to the coconut whipped cream just to punch up the peppermint. But…I’m really into the classic chocolate-mint combination, so add based on your own devotion-level.
Frappuccino Fridays: Peppermint Mocha
- For the coconut whipped cream, scoop the cream from the top of the can of coconut milk, reserving the coconut water at the bottom of the can for other uses.
- Using a hand mixer or stand mixer with the whisk attachment, whip the coconut cream until smooth and fluffy. Add sweetener and peppermint extract and continue to whip until incorporated. Refrigerate until ready to use.
- For the frappuccino, blend the frappuccino ingredients, except the bananas, together until well combined. Add the bananas and blend into a smooth, thick shake.
- To serve, divide the frappuccino between 2 tall glasses and top with coconut whipped cream. Serve immediately.
